Bacon Meatloaf Lasagna #8

Ingredients

For the Meat Layer

  • 1 lb (450 g) ground beef
  • ½ lb (225 g) ground pork
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper

For the Lasagna Layers

  • 9–12 lasagna noodles (cooked al dente)
  • 2 cups marinara sauce
  • 12 – 16 strips of bacon
  • 2 cups shredded mozzarella
  • ½ cup grated Parmesan
  • Optional: chopped parsley for garnish

Instructions

  1. Make the Meatloaf Mixture
    In a large bowl, mix the ground beef, ground pork, onion, garlic, egg, breadcrumbs, milk, Worcestershire, salt and pepper. Mix until well combined.
  2. Preheat Oven
    Preheat to 375°F / 190°C.
  3. Assemble the Lasagna In a loaf pan or baking dish:
    • Spread a thin layer of marinara sauce on the bottom.
    • Add a layer of lasagna noodles.
    • Top with ½ of the meatloaf mixture, press flat like a meat layer.
    • Sprinkle mozzarella + Parmesan.
    • Spoon marinara sauce over the cheese.
    • Add another layer of noodles.
    • Add remaining meatloaf, press flat.
    • Add more cheese + sauce.
    • Finish with a final layer of noodles + sauce + cheese.
  4. Top with Bacon
    Lay the bacon strips across the top (slightly overlapping) covering the full surface.
  5. Bake
    Cover loosely with foil and bake 45 minutes.
    Remove foil and bake another 15–20 mins until bacon is crispy and internal temp is cooked through.
  6. Rest & Serve
    Let rest 10 minutes before slicing. Garnish with parsley if desired.
