Cheesy Taco Stuffed Shells

Ingredients

  • 20–22 jumbo pasta shells
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup ricotta or cream cheese
  • 1 cup shredded cheese (for topping)

Instructions

  1. Cook pasta shells until al dente; drain and set aside.
  2. Brown ground beef in a skillet, drain fat.
  3. Add taco seasoning + ⅓ cup water and simmer 2–3 min.
  4. Remove from heat and stir in salsa, ricotta (or cream cheese), and 1 cup shredded cheese.
  5. Spoon beef mixture into each shell and place in baking dish.
  6. Sprinkle remaining cheese on top.
  7. Bake at 350°F (175°C) for 15–20 min, until cheese is melted and bubbly.
