Chicken Fajitas

Ingredients

  • 1 lb (450 g) chicken breast, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp oil
  • 1 tbsp lime juice
  • 1 packet (or 2 tsp) fajita seasoning
  • Tortillas, for serving
  • Optional toppings: sour cream, salsa, shredded cheese, guacamole

Instructions

  1. Toss chicken strips with fajita seasoning and lime juice.
  2. Heat 1 tbsp oil in a skillet; cook chicken for 5–6 min until fully cooked. Remove and set aside.
  3. In same skillet add remaining oil and cook onion & bell peppers for 4–5 min until tender.
  4. Add chicken back to skillet and stir together for 1–2 min.
  5. Serve hot in tortillas with your favorite toppings.
