
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3–4 potatoes, diced
- 2 carrots, sliced
- 1 can diced tomatoes (14 oz)
- 3 cups beef broth
- Salt & pepper to taste
- Optional: 1 tsp garlic powder, 1 tsp paprika
Instructions
- Brown ground beef in a large pot; drain excess fat.
- Add onion and cook 2–3 min until softened.
- Add potatoes, carrots, diced tomatoes, and beef broth.
- Season with salt, pepper, and optional spices.
- Bring to a boil, reduce heat, and simmer 25–30 min until vegetables are tender.
- Stir and serve hot.
