Chicken Drumsticks, Potato Wedges, Greek Salad, Coleslaw and Lemon Wedges

🍗 Crispy Chicken Drumsticks

Ingredients

  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat drumsticks dry, toss in olive oil and seasonings.
  3. Place on a baking sheet with parchment paper.
  4. Roast for 35–40 minutes, turning once, until golden and cooked through.

🥔 Potato Wedges

Ingredients

  • 4 large potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper

Instructions

  1. Toss wedges with olive oil and seasonings.
  2. Spread on a baking tray.
  3. Bake at 400°F (200°C) for 30–35 minutes until crispy.

🥗 Greek Salad

Ingredients

  • 2 cucumbers, diced
  • 3 tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • ½ cup kalamata olives
  • ½ cup feta cheese, cubed
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt & pepper

Instructions

  1. Combine cucumbers, tomatoes, onion, bell pepper, and olives.
  2. Whisk olive oil, vinegar, oregano, salt & pepper.
  3. Toss salad and top with feta cubes.

🥬 Creamy Coleslaw

Ingredients

  • ½ green cabbage, shredded
  • ½ purple cabbage, shredded
  • 2 carrots, grated
  • ½ cup mayo
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • Salt & pepper

Instructions

  1. Mix cabbages and carrots in a large bowl.
  2. In another bowl, whisk mayo, vinegar, sugar, salt & pepper.
  3. Combine and chill 30 minutes before serving.

🍋 Lemon Wedges

Cut fresh lemons into wedges to serve on the side — perfect for squeezing over the chicken and salad.
