
🍳 Ground Beef & Vegetable Skillet
Ingredients (serves 4)
- 1 lb (450g) ground beef
- 2 tbsp olive oil (or beef drippings)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 bell pepper (any color), chopped
- 1 zucchini, diced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup green beans, cut into 1-inch pieces
- 1 can (14 oz / 400g) diced tomatoes
- 1 tsp paprika
- ½ tsp dried oregano (or Italian seasoning)
- Salt & pepper to taste
- ½ cup shredded cheese (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat. Add ground beef and cook until browned (6–7 min). Drain excess fat if needed.
- Push beef to the side, add olive oil, onion, and garlic. Sauté until softened.
- Stir in carrots, bell pepper, zucchini, corn, and green beans. Cook for 5–6 minutes until veggies start to soften.
- Add diced tomatoes, paprika, oregano, salt, and pepper. Stir everything together.
- Simmer uncovered for 8–10 minutes, until vegetables are tender and flavors combine.
- Optional: sprinkle cheese on top, cover, and let melt for 2 minutes.
- Garnish with fresh parsley and serve hot.
