
🔥 Jerk Chicken Wings
Ingredients
- 2 lbs chicken wings
- 3 tbsp jerk seasoning (store-bought or homemade)
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
Instructions
- Toss wings with seasoning, oil, soy, lime, and sugar.
- Marinate at least 1 hr (overnight best).
- Bake at 400°F (200°C) for 40–45 min, flipping once. Or grill for smoky flavor.
- Serve with extra jerk sauce on the side.
🥬 Collard Greens (Southern-Style)
Ingredients
- 1 bunch collard greens, chopped
- 2 tbsp olive oil (or bacon fat)
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 smoked turkey leg (or ham hock)
- 1 tbsp apple cider vinegar
- Salt & pepper
Instructions
- In a pot, sauté onion & garlic in oil.
- Add smoked meat and broth, bring to simmer.
- Add collards, cover, cook low for 45–60 min until tender.
- Stir in vinegar before serving.
🧀 Creamy Mac & Cheese
Ingredients
- 2 cups elbow macaroni, cooked
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- 2 cups shredded cheddar (or mix of cheeses)
- ½ tsp paprika
- Salt & pepper
Instructions
- Melt butter in a pot, whisk in flour (1 min).
- Slowly add milk, whisk until thickened.
- Stir in cheese, paprika, salt & pepper.
- Toss with pasta, serve creamy or bake with extra cheese on top.
🍚 Peas n’ Rice (Caribbean Style)
Ingredients
- 1 cup long-grain rice
- 1 can coconut milk (13 oz)
- 1 can kidney beans (or pigeon peas), drained
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tsp thyme
- 1 Scotch bonnet (whole, optional for flavor not heat)
- 1 cup chicken broth
- Salt
Instructions
- Sauté onion & garlic in oil.
- Add rice, coconut milk, beans, broth, thyme, Scotch bonnet.
- Bring to boil, cover, simmer 20 min until rice is tender.
- Fluff, remove pepper before serving.
