Jerk wings, collard green, Mac, & peas n rice

🔥 Jerk Chicken Wings

Ingredients

  • 2 lbs chicken wings
  • 3 tbsp jerk seasoning (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar

Instructions

  1. Toss wings with seasoning, oil, soy, lime, and sugar.
  2. Marinate at least 1 hr (overnight best).
  3. Bake at 400°F (200°C) for 40–45 min, flipping once. Or grill for smoky flavor.
  4. Serve with extra jerk sauce on the side.

🥬 Collard Greens (Southern-Style)

Ingredients

  • 1 bunch collard greens, chopped
  • 2 tbsp olive oil (or bacon fat)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 smoked turkey leg (or ham hock)
  • 1 tbsp apple cider vinegar
  • Salt & pepper

Instructions

  1. In a pot, sauté onion & garlic in oil.
  2. Add smoked meat and broth, bring to simmer.
  3. Add collards, cover, cook low for 45–60 min until tender.
  4. Stir in vinegar before serving.

🧀 Creamy Mac & Cheese

Ingredients

  • 2 cups elbow macaroni, cooked
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 2 cups shredded cheddar (or mix of cheeses)
  • ½ tsp paprika
  • Salt & pepper

Instructions

  1. Melt butter in a pot, whisk in flour (1 min).
  2. Slowly add milk, whisk until thickened.
  3. Stir in cheese, paprika, salt & pepper.
  4. Toss with pasta, serve creamy or bake with extra cheese on top.

🍚 Peas n’ Rice (Caribbean Style)

Ingredients

  • 1 cup long-grain rice
  • 1 can coconut milk (13 oz)
  • 1 can kidney beans (or pigeon peas), drained
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp thyme
  • 1 Scotch bonnet (whole, optional for flavor not heat)
  • 1 cup chicken broth
  • Salt

Instructions

  1. Sauté onion & garlic in oil.
  2. Add rice, coconut milk, beans, broth, thyme, Scotch bonnet.
  3. Bring to boil, cover, simmer 20 min until rice is tender.
  4. Fluff, remove pepper before serving.
