Ingredients (makes 4 wraps)
For the Chicken
- 2 chicken breasts (sliced into strips)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 2 tbsp BBQ sauce
For the Crunch
- 2 cups shredded lettuce (or coleslaw mix)
- Β½ cup corn kernels (fresh or charred)
- Β½ cup tortilla strips or crushed nacho chips (for crunch)
For the Sweet Ranch Sauce
- Β½ cup ranch dressing
- 1 tbsp honey (or maple syrup)
- Β½ tsp smoked paprika (optional, for color)
Other
- 4 large flour tortillas
- Β½ cup shredded cheddar or Monterey Jack cheese
- Pickled jalapeΓ±os (optional, for heat)
Instructions
- Cook the Chicken
- Toss chicken strips with oil, Cajun seasoning, and smoked paprika.
- Cook in a skillet over medium heat until golden and cooked through (6β7 minutes).
- Toss with BBQ sauce to coat.
- Make the Sweet Ranch Sauce
- Mix ranch, honey, and smoked paprika in a small bowl. Chill until ready.
- Assemble the Crunch
- In a bowl, combine lettuce (or slaw mix), corn, and tortilla strips/nacho chips.
- Build the Wraps
- Warm tortillas slightly.
- Layer cheese, Cajun BBQ chicken, sweet ranch drizzle, and crunchy mix.
- Add jalapeΓ±os if you like it spicy.
- Roll up tightly, slice in half, and serve.
