


Ingredients:
1 cup sweet rice flour (mochiko)
1/4 cup sugar
1 cup water
Cornstarch (for dusting)
1 cup fresh peach slices, chopped
1/2 cup peach jam
Directions:
In a microwave-safe bowl, mix the sweet rice flour and sugar.
Gradually add water to the mixture, stirring until smooth.
Cover the bowl with plastic wrap and microwave on high for 1 minute.
Stir the mixture and microwave for another 1 minute. Repeat the process until the mixture becomes sticky and translucent (about 3 minutes total).
Dust a clean surface with cornstarch and transfer the mochi dough onto it.
Roll the dough into a log and cut it into 12 equal pieces.
Flatten each piece into a circle and place a small amount of chopped peach and a dollop of peach jam in the center.
Pinch the edges together to seal and shape into a ball.
Roll each mochi ball in cornstarch to prevent sticking.
Chill in the refrigerator for 30 minutes before serving.
