🍳 Ground Beef & Vegetable Skillet

Ingredients (serves 4)

  • 1 lb (450g) ground beef
  • 2 tbsp olive oil (or beef drippings)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 bell pepper (any color), chopped
  • 1 zucchini, diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 tsp paprika
  • ½ tsp dried oregano (or Italian seasoning)
  • Salt & pepper to taste
  • ½ cup shredded cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium heat. Add ground beef and cook until browned (6–7 min). Drain excess fat if needed.
  2. Push beef to the side, add olive oil, onion, and garlic. Sauté until softened.
  3. Stir in carrots, bell pepper, zucchini, corn, and green beans. Cook for 5–6 minutes until veggies start to soften.
  4. Add diced tomatoes, paprika, oregano, salt, and pepper. Stir everything together.
  5. Simmer uncovered for 8–10 minutes, until vegetables are tender and flavors combine.
  6. Optional: sprinkle cheese on top, cover, and let melt for 2 minutes.
  7. Garnish with fresh parsley and serve hot.
