Hobo Stew

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3–4 potatoes, diced
  • 2 carrots, sliced
  • 1 can diced tomatoes (14 oz)
  • 3 cups beef broth
  • Salt & pepper to taste
  • Optional: 1 tsp garlic powder, 1 tsp paprika

Instructions

  1. Brown ground beef in a large pot; drain excess fat.
  2. Add onion and cook 2–3 min until softened.
  3. Add potatoes, carrots, diced tomatoes, and beef broth.
  4. Season with salt, pepper, and optional spices.
  5. Bring to a boil, reduce heat, and simmer 25–30 min until vegetables are tender.
  6. Stir and serve hot.
