
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup corn (canned or frozen)
- 1 cup uncooked rice
- 2 cups beef broth
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- Brown ground beef in a large skillet; drain excess fat.
- Add onion and bell pepper, cook 3–4 min until soft.
- Stir in taco seasoning, rice, corn, and beef broth.
- Bring to a boil, reduce heat, cover, and simmer 15–18 min until rice is cooked.
- Sprinkle cheese on top, cover and let melt for 2–3 min.
- Serve hot.
