Mexican beef and rice skillet

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 cup corn (canned or frozen)
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Brown ground beef in a large skillet; drain excess fat.
  2. Add onion and bell pepper, cook 3–4 min until soft.
  3. Stir in taco seasoning, rice, corn, and beef broth.
  4. Bring to a boil, reduce heat, cover, and simmer 15–18 min until rice is cooked.
  5. Sprinkle cheese on top, cover and let melt for 2–3 min.
  6. Serve hot.
