Mini Sandwich Bites #23

Ingredients:


6 slices of white or wheat bread (crust removed)
1/2 cup boiled sweet corn
1/2 cup chopped bell peppers
1/4 cup grated carrots
2 tbsp mayonnaise
2 tbsp cream cheese or hung curd
Salt and pepper to taste
Cherry tomatoes (for topping)
Toothpicks or skewers
Instructions:

  1. Mix corn, bell peppers, carrots, mayonnaise, cream cheese, salt, and pepper in a bowl.
  2. Cut bread slices into circles using a cookie cutter or glass.
  3. Spread filling between two bread circles.
  4. Secure with a cherry tomato on top using a skewer.
  5. Serve chilled or at room temperature.
